ZUCCHINI BREAD 1/2 C vegetable oil 1/2 C applesauce 2 C white sugar 3 eggs 1 tbsp vanilla 3 C grated zucchini 3/4 C raisins 3/4 C chopped nuts 1.5 C white flour 1.5 C whole wheat pastry flour 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 1/2 tsp salt Combine oil, applesauce, sugar, and vanilla. Beat in eggs. Add zucchini. Stir together dry ingredients (including raisins and nuts, which will help prevent sinking), add to wet. Bake in two greased and floured loaf pans. Bake 1 hour at 325 degrees.
