From my friend Rachel Stark: Mix: 1 C Bulgher Wheat 1/2 C dried parsley 1/4 C dried peppermint 1/4 C dried spearmint (could use fresh spices) Pour 2 Cups boiling water over this. Let sit for 1 hr. Add: 1/3 C olive oil 1/3 C lemon Juice 1/2 tsp salt 1 can black beans (or any other beans) She says feta cheese crumbled in it is also yummy. Or tomatoes, or anything like that. Could use WW couscous as well.
