A modification of my regular chocolate chip cookie recipe. 1/2 cup softened butter 1 cup packed dark brown sugar 1 tsp vanilla extract 2 eggs 1/2 cup cooked pureed winter squash 3 cups whole wheat pastry flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp cloves 1 1/2 cup chocolate chips The chocolate chips were fancy ones Ken found and ordered online, 75% cocoa. I normally would have used 1/2 C white sugar in addition to the 1 C brown, but decided not to since I was having the very dark chocolate. Thought it would defeat the point... So, if you have normal chocolate chips, you might add a half cup white sugar. This recipe works to make banana cookies too -- just substitute a banana for the squash. (And add the extra sugar.) (And maybe leave out the ginger and cloves.)
