Editing to have just English 4 cups flour, used half WW 1/4 cup vegetable oil 1 tbsp. sugar 1 tsp salt 1/4 cup bubbly, active sourdough starter 1 cup + 2 tbsp warm water - then added 1-2 tbsp more cuz it seemed dry What I did - and how it worked: stir dry together mix wet including starter together Pour into dry and mix around, using hands if needed at the end Wait 30 mins for it to rest knead dough (I'd say about 1/2 addl cup flour went in while kneading) stick in oiled bowl and let rise overnight - rose quite a lot! Next day: Punch down the dough and shape loaf into buttered pan - punching it down was actually pretty hard to get the bubbles out - seemed to need my "loaf and a half" long pan Let rise again - after 3 hrs, house at 73, was ready to bake. Put in fridge to stop - the rise so we could bake it for dinner. Should have covered with - plastic wrap as top was dried out and ended up hard when baked. Bake at 375 for 45-50 mins Note, original recipe said starter should be "100% hydration". what does this mean?
