Zucchini Loaf, from the Moose Hill Community Farm Recipes, 2005 6 medium zucchini (or equivalent quantity of other vegetables), grated 1 medium onion, grated (the recipe calls for 1 green pepper, chopped fine; I often put in one hot pepper and some garlic) 1 cup grated sharp cheese (I usually use cheddar) 2 eggs, lightly beaten 1/4 cup vegetable oil (I go light on this, but not too light) 2 cups breadcrumbs (sometimes I use cornflake crumbs, sometimes I go light on this) Shred everything in cuisinart Mix everything together Smear oil all over the bottom of a baking dish (I've been using a 9x13 glass baking dish) Bake at 350 for about 1 hour Probably I actually use more vegetable than it calls for; how much is "one medium zucchini" anyway. Good way to use up broccoli stems
