Risotto in the Instant Pot, from Ken 6 cups vegetable broth/water. Heat on stove first: it's quicker 1 medium onion 2 oz olive oil 3 cups arborio rice 1 cup white wine/sherry one large zucchini, 1 head broccoli 5 minutes pressure cook, then wait 2 min and manual release. Saute onions first; then coat rice grains in the hot oil; then add wine and stir til it is absorbed, then add water/broth and veggies and run in instant pot. Serve with parmesan to sprinkle on top. Actually works pretty well with red wine and mushrooms instead. Timing: takes about 15 mins from turning it on to saute setting to being ready to start pressure cook. Takes 20-25 minutes to complete the pressure cook cycle. I call this a "one-hour dinner", because it also takes 10-15 minutes to get everything out and chop the veggies.
