Tim Walden's Vegan Rice and Beans, with yduJ's modifications 2 cups water and/or vegetable broth 1 can kidney or black beans, drained 1/2 tsp cumin scant 1/4 tsp cayenne pepper (or use 1/2 jalapeno with the veggies) fresh ginger (appx 2 tsp chopped fine or grated) fresh garlic (2-3 cloves) 1 onion, diced 1-2 cups chopped vegetables (actually I use a lot more) 1 cup white rice Put water(broth), beans, and spices in medium pot, bring to boil. Add vegetables, stir, return to boil. Add rice, return to boil while stirring. Cover, reduce heat, and simmer for 15 minutes. Turn off heat and let stand on burner for 6 minutes. (do not open pot, this 6 minutes is finishing the cooking) (note that this may work differently for non-electric stoves) Mix leaving air spaces and let cool for 5 minutes. (optional) Mix again and serve. Claims it serves 2-3 but really it serves more like 5, especially if you triple-up on the chopped vegetables. When I double the recipe, I use one can of each type of beans. Any beans work -- pinto, navy, etc. I skip the "leave air spaces and cool" step, but you do need to mix it up after cooking. ------- Sometimes you only have brown rice. That makes it harder. Last time I tried: 2.75 C veggie broth. Cook rice in veggie broth for 25 minutes on low after it comes to a boil. Dump in all the other stuff. Stir. Bring back to boil with lid on. Lower temp. Stir again after 15 more minutes. Checked after 15 more minutes and rice was still not done, and there was a fair bit of water left. Waited another 10 or so minutes (forgot to time it). Rice finally done, but a little soupy. So try 2.5C next time. --------- Next time with brown rice, tried 2.5 C veg broth. Brought to boil, and let boil for a little while longer than wanted to before reducing temp. Ran timer for 32 min (bad aim). Added veggies etc. Ran timer for 17 min (bad aim). Panicked partway through, added 1/4 C boiling water. Not even close to done; ran timer for 10 min. Closer, ran timer for 7 min. ---------- Plan for today: Run timer for 45 mins before adding non-rice stuff Run timer for 20 mins after. Went with 2.75 and tried to scant it a bit. There wasn't much liquid left after the 45 mins, and mixing the veggies, spices, and beans in let even more evaporate. ---------- Today: Try with pre-cooked brown rice. Boil all non-rice ingredients in 3/4 C water for 15 mins. Throw in cooked rice, boil for another 5 mins til it absorbs. Surprisingly similar to starting with non-cooked rice, so let's do that in the future.
