Pumpkin Chocolate Chip Squares Adapted from http://www.olum.org/yduj/recipe/pumpkin-cc-squares.pdf, for decreased fat and increased fiber. Still just as yummy. 1/2 C butter, softened 1.25 C sugar 1 egg 2 tsp vanilla 1.5 C pumpkin puree (or other winter squash) 2.25 - 2.5 C whole wheat pastry flour 1 tbsp pumpkin pie spice (see below) 1 tsp baking soda 1.5 C chocolate chips Combine butter, sugar, egg, and vanilla, beat until fluffy. Add pumpkin puree. Stir together flour, spice, baking soda, add to mixture. Stir in chocolate chips. Grease and flour a 9x13 baking pan. Bake for 30-40 min, until a toothpick comes out clean(ish - a few crumbs are OK). Pumpkin pie spice: 1.5 tsp cinnamon 3/4 tsp ginger 1/2 tsp nutmeg 1/4 tsp allspice 1/4 tsp cloves
