Pumpkin Chocolate Chip Squares 1/2 C butter, softened, or vegetable oil (usually I use canola) 1.25 C sugar 2 eggs 1.5 C pumpkin puree (or other winter squash) (pre-cooked) 1/2 C white flour 2 C whole wheat flour 1 tsp baking soda 1.5 tsp cinnamon 3/4 tsp ginger 1/2 tsp nutmeg 1/4 tsp allspice 1/4 tsp cloves 1.5 C chocolate chips Combine butter/oil, sugar, and egg, mix well. Stir together white flour, spice, baking soda, add to mixture. Add whole wheat flour alternating with pumpkin puree. Stir in chocolate chips. Grease and flour a 9x13 baking pan. Bake at 350 for 35 min, until a toothpick comes out clean(ish - a few crumbs are OK). (I don't bother to check anymore, just take out after 35 min.) Can use 1 tbsp pumpkin pie spice instead of individual spices. Judy Anderson Adapted from http://www.olum.org/yduj/recipe/pumpkin-cc-squares.pdf, for decreased fat and increased fiber. Still just as yummy.
