Pancakes Adapted from the basic Joy of Cooking griddle cakes recipe 1.5 C whole wheat pastry flour 1.75 tsp baking powder 2 tbsp sugar 1 C skim milk 2 eggs 3 tbsp canola oil Note: I don't measure the sugar very accurately. Stir together dry ingredients. Beat eggs with fork, stir into milk, add oil, stir vigorously with fork to get the oil combined. Add to dry ingredients, stirring constantly, but do not overbeat. Preheat pan! Preheat fully until drops of water "dance" on the pan. --------------- For 1.5 recipes: 2.25 C whole wheat pastry flour 2.5 tsp plus a half of the 1/4 tsp baking powder 3 tbsp sugar 1.5 C skim milk 3 eggs 1/4 C canola oil (this is slightly too little, let it slop into the pan a bit.) --------------- For 2 recipes 3 C whole wheat pastry flour 1 tbsp + 0.5 tsp baking powder (or, 3.5 tsp) 1/4 C sugar 2 C skim milk 4 eggs 1/3 C canola oil (this is also slightly too little)
