Oatmeal cookies Based loosely on an older version of the Quaker Oats "vanishing oatmeal cookies" recipe. The version online at the time of this writing is not the same as the recipe I started with. 1/2 cup vegetable oil 1/2 cup unsweetened applesauce 1.5 cup dark brown sugar (packed) 2 eggs 1/2 cup white flour 1 teaspoon baking soda 1 teaspoon cinnamon 1.25-1.5 cup whole wheat flour 3 cups oatmeal 1.5 cup dried fruit 1/2 cup chocolate chips Mix oil and brown sugar; add eggs and beat well. Stir together white flour with cinnamon and baking soda, add to wet ingredients. Alternate applesauce with whole wheat flour. Mix in oatmeal. Fold in fruit and chocolate chips. Drop onto greased cookie sheet. Bake at 375 for 12 minutes. Recently tried fresh fruit. Substituted not quite one cup diced strawberries for the applesauce, and did not include any dried fruit. Result: should have used more flour, perhaps 2.25-2.5 cups instead of the original 1.75-2 cups. First batch was too thin and crispy and hard to get off of the cookie sheet. Adding flour to remainder produced desired result. Chocolate chips overwhelmed fruit flavor, rather than achieving "chocolate covered strawberry" vibe.
