Original recipe from my mother: About 2 lbs ground turkey - don't use the really fat-free stuff One pkg frozen chopped spinach, thawed and squeezed fairly dry One egg About 1/3 cup dried breadcrumbs About 1/4 or a bit more milk About 1/3 to 1/2 cup parmesan or parmesan/romano blend One onion chopped & sauteed first Mix it all together with your hands. Pam a baking pan & form it into tennis ball size balls. Bake about 45 min to an hour at about 400. It usually lets out quite a lot of watery juice which can smoke; if so lower the temp. And if they don't brown because of the lower temp, put it under the broiler for the last 5 min or so. My notes: (Original called for way too much salt, which I don't put in at all.) This can be really versatile: I often use some other vegetable, shredded and sauteed. You must saute it long enough to boil off most of the water. Sometimes I use fresh spinach, precooked in some way. Sometimes I make smaller balls, in which case I cook it for less time (same temp). The walnut-sized ones I made for my birthday I cooked for 30 minutes. They were a double recipe, and contained these modifications: instead of frozen spinach: 1 large zucchini, shredded in cuisinart 4 medium-large mushrooms, shredded in cuisinart a handful of fresh spinach leaves, chopped corn flake crumbs instead of bread crumbs Onion was also processed in cuisinart. I added 2 garlic cloves, pressed. Veggies were sauteed for a long time to boil off the water. I don't use cooking spray, I smear olive oil over the pan with my fingers. (Is this better? I don't know. It seems to burn less and be less of a mess to clean up.)
