yduJ's Lasagne-inspired Casserole 12 oz "sturdy" pasta such as penne or rotini 1 qt (or a little less) spaghetti sauce Filling: 1 pt ricotta (or cottage cheese) 1 "handful" grated parmesan (guessing 1/2 cup?) 3 eggs (optional) italian seasonings of some sort (basil, oregano, thyme, or commercial mix), just a sprinkle. (optional) other cheeses (optional) can also add some mashed tofu Veggies: 8-12 oz spinach or other greens an onion or two, chopped some garlic cloves (optional) other veggies, e.g. broccoli, mushrooms, whatever; chopped Olive oil, various amounts Oil the bottom of a 9x13 glass baking dish. Preheat oven to 350. In a pretty large bowl, beat the eggs with a fork, stir in ricotta and parmesan and anything optional you chose from the filling section. Make this pretty smooth. Saute onions, garlic, optional veggies (except greens) in some olive oil. You may want to steam things like broccoli. Let cool a bit (you don't want to cook the eggs). Mix into cheese mixture. Bring some water to a boil. Cook the pasta. At the VERY END stir in the greens until they wilt. Keep stirring so they don't clump up and are well-distributed in the pasta. (This is a pain.) Drain the pasta/greens. Run cold water over it to stop pasta and greens from continuing to cook, and to cool down enough to not cook the eggs. Mix into cheese/veggie mixture. Pour into baking dish. Spread out and pat down firmly. Top with spaghetti sauce, ladling it on and spreading it out evenly. Cover baking dish with aluminum foil. Put in oven for 45 minutes. Remove aluminum foil and bake for an additional 15 minutes, until there are little bubbly bits on the surface.
