GINGERSNAPS 1/2 cup canola oil 1 cup brown sugar 1 egg (I used a locally sourced duck egg in this case) 1/4 cup molasses 1/4 cup applesauce 3 cups mix of whole wheat pastry flour and all purpose white flour 2 tsp. baking soda 1 tsp. ginger 1 tsp. cinnamon 1 tsp. cloves approximately 1 cup white sugar (to roll dough in) Mix oil and brown sugar. Add egg. Beat well. Stir together a third to half the flour and all the spices and baking soda. Add to wet and mix well. Add molasses and applesauce. Mix again. Add remaining flour. Chill 4 or more hours. Roll into small balls, and roll in white sugar. Bake at 350 degrees for 12-15 minutes. Little shards of dough will remain in sugar; these can be strained out and the sugar can be reused. If using butter the dough will be stiffer and easier to work.
