GINGERSNAPS 1/2 cup canola oil (can use butter) 1 cup brown sugar 1 egg 1/4 cup molasses 1/4 cup applesauce 3 cups whole wheat pastry flour 2 tsp. baking soda 1 tsp. ginger 1 tsp. cinnamon 1 tsp. cloves approximately 1 cup white sugar (to roll dough in) Mix oil and brown sugar. Add egg. Beat well. Add molasses and applesauce. Beat again. Stir together dry ingredients (not including final cup white sugar). Add to wet ingredients, mix well. Chill 4 or more hours. Roll into small balls, and roll in white sugar. Bake at 350 degrees for 12-15 minutes. Little shards of dough will remain in sugar; these can be strained out and the sugar can be reused. If using butter the dough will be stiffer and easier to work.
