Gaufres de Liege -- Liege-style waffles Ken Olum Adapted from a recipe of Marie-Claire of CyberLiege. 2 1/8 cups flour. (I used bread flour.) 6 tablespoon butter, softened. 1 whole egg, slightly beaten. 5 ounces milk. 1 tablespoon instant ("bread machine") yeast. 1 tablespoon sugar. A little ground cinnamon. -- 1/8 cup powdered sugar. 1/4 cup granulated (or demerara, pearl etc.) sugar. Mix together first 9 ingredients. I kneaded the dough for a few minutes, but I don't know if this was necessary. Let rise 2 hours. Work powdered and granulated sugar into dough. Separate dough into 4 balls and cook with waffle iron. I used an American-style (fine grid) iron and it worked fine. Makes 4 small (but filling) waffles.
