CHOCOLATE ZUCCHINI CAKE 1/2 C butter 1.5 C sugar 2 eggs 1 tsp vanilla 1/2 C buttermilk, yogurt, or other sour milk product 1/2 C applesauce 1 C white flour 1.5 C whole wheat pastry flour 4 tbsp cocoa powder 1 tsp baking soda 1/2 tsp cinnamon 1/2 tsp cloves 2.5 C shredded zucchini 1/4 C chocolate chips Cream butter and sugar; add eggs and vanilla and beat well. Stir together dry ingredients, add alternately with buttermilk and applesauce. Stir in zucchini. Pour into greased and floured 8x10 baking pan. Sprinkle chocolate chips on top. Bake at 325 for 45-55 minutes or until a toothpick comes out clean.
