Chocolate tofu pudding 1 C semisweet chocolate chips 1 12-oz block of tofu [silken works best] 1/4 C milk or soy milk 2 tbs leftover strong coffee 1 tsp vanilla pinch of salt Put everything but the chocolate chips in the blender and blend til smooth. Melt chocolate chips in the microwave or in a double boiler. With blender going, pour/spoon into mixture, continue blending til smooth. My tofu comes in 14 oz packages and it works fine to just use it all. Use soy milk to make a vegan dish. Note that some chocolate isn't vegan -- check your brand if you're feeding actual vegans who actually care. Personally I think a dollop of cream on top makes this really tasty so I don't. People in my household don't like coffee so I just substitute more milk for the coffee to make plain, but I bet it's really yummy with coffee. Sometime I'll try making it with coffee. I tried other flavorings but wasn't impressed. Don't try to double the recipe, your blender isn't big enough.
