Chana Masalendar (via Peg Primak) Fry until they darken (only a few seconds): 1 T oil (some flavorful kind is best) 1/4 t whole cumin seeds Add and fry 7-8 minutes: 1 med onion, chopped (I recommend more) Turn heat to low, add these and mix; fry 2-3 mins: 1/4 t ground cinnamon 1/4 t ground nutmeg 1/4 t ground cloves 1/4 t ground coriander 2 cloves garlic (smushed) 1/2 in sq ginger, chopped finely Add and mix in: 1 T tomato paste Add and let cook about 10mins: 1 can chickpeas, including 2 T or more of liquid any other veggies you care to put in (I like halved cherry tomatoes) 1/8 t cayenne (more or less to taste) 3/4 t ground amchoor salt (if desired) Serve with Indian bread or rice
