Banana Chocolate Chip Cookies I had a really dead banana lying about, but only one, which isn't enough for banana bread. So, I made this up. 1/2 C butter 1 C brown sugar 1/2 C white sugar 2 eggs 1 tsp vanilla 1 very dead banana 3 C whole wheat pastry flour 1 tsp baking soda "three handfuls" chocolate chips (Sorry about the chocolate chip measurement. I didn't measure. It's about 1.5 cups, I think. Less than a 12 oz package, anyway.) Cream butter and sugars. Add eggs, vanilla, and banana, beat well. Mix baking soda into flour, mix into wet. Add chocolate chips and stir. Bake at 375 for about 12 minutes. Once, I had no baking soda or vanilla. Substituted 1 tablespoon baking powder (which was available), ignored the vanilla. Didn't have WW pastry flour, and used WW regular flour despite possible "sawdust" texture. Taste testers pronounced the result delicious. I later tried it with 1/2 cup pumpkin, which we had leftover from making pumpkin pies. It worked great. I put in a teaspoon of ginger and a teaspoon of cinnamon. They were to die for. For these, I used 1 cup white flour, and 2 cups whole wheat. I also tried just 1/2 cup applesauce, but they were only OK. I was trying to make my regular chocolate chip cookie recipe lower fat. (chocolate-chip-cookies.txt in this directory.) I decided to stick to the bad-for-you recipe when I just want chocolate chip.
