BANANA BREAD 1/2 C butter or vegetable oil 2 C sugar 3 eggs 2 tsp vanilla 2.5 C mashed banana (appx 5) 1/2 C buttermilk or yogurt 1 C white flour 2 C whole wheat pastry flour 2 tsp baking soda 2 tsp cinnamon 1 tsp nutmeg 1/2 tsp cloves 1/2 tsp allspice Cream butter (if using). Add sugar, beat well. Add eggs and vanilla, beat. Stir together white flour, spices, and baking soda. Mix into butter/oil mixture. Mix in banana. Add WW flour, alternating with buttermilk/yogurt. Pour into 3 greased and floured loaf pans, and bake at 350 for 50 minutes to 1 hour or until toothpick comes out clean. No buttermilk on hand? Make it by putting 1.5 tsp white vinegar into a measuring cup, add milk until up to the 0.5 cup mark. Stir and let stand for 5 minutes. Here's the recipe multiplied by 1.5. Put into 4 pans intead of 3: 0.75 C butter (1.5 sticks) (or vegetable oil) 3 C sugar 5 eggs 3 tsp vanilla 3.5ish C mashed banana (appx 7) 3/4 C buttermilk or yogurt 1 C white flour 3.5 C whole wheat pastry flour 3 tsp baking soda 3 tsp cinnamon 1.5 tsp nutmeg 0.75 tsp cloves 0.75 tsp allspice --------------------- Cori's Grammy's Banana Bread (I haven't tried this) Mix in order given, and bake in moderate oven (350) about 1 hour: Makes one loaf. 3 mashed bananas 3/4 cup sugar 2 cups flour 1 egg 1 teaspoon baking soda 1/2 cup chopped walnuts, if desired (I usually put in more like 1/2 cup and sprinkle whole ones on top) One banana is about 1/2 cup. I have had great luck substituting pumpkin for some of it, and using the spices I'd use for pumpkin pie.
