Applesauce Cookies, adapted from a recipe by Becky Harris 1/2 C butter (salted, or add 1/2 tsp salt) 1/2 C brown sugar 1/2 C white sugar 1 egg 1 tsp baking soda 1 C cold applesauce 1 C white flour 1.5 C whole wheat (pastry) flour 1/2 tsp baking powder 1/2 tsp cloves 1 tsp cinnamon 1 tsp nutmeg 1 cup raisins and/or other dried fruit Add baking soda to cold applesauce. Set aside. It will puff up in a few minutes. Cream butter and sugars, beat in egg. Stir together spices and baking powder into white flour. Add to wet ingredients. Add applesauce mixture. Add whole wheat flour. Stir in dried fruit. Drop by teaspoons onto greased cookie sheets. Bake at 425 for 8 minutes. Makes 3 dozen.
